Banana Bread with a Chocolate Swirl
Makes 2 loaves
What you'll need:
1 ½ cup sugar
¾ cup butter
3 eggs
1 ½ cup (3) soft bananas, smashed
1 ½ tsp vanilla
¾ cup buttermilk
3 cups flour
¾ tsp salt
1 ½ tsp baking powder
1 ½ tsp baking soda
6 oz. chocolate
1 tbsp. butter
What you'll do:
Preheat oven to 375 degrees.
Cream sugar, butter, and baking soda.
Add eggs and beat well; next add buttermilk, vanilla, flour, baking powder and salt.
Melt the chocolate and the tablespoon of butter in a double boiler.
Take about 1/4 of the batter, place in a separate bowl and mix in the melted chocolate.
In the other bowl mix in the bananas.
Pour about half the banana batter in the two loaf pans. Spoon in the chocolate, then add the rest of the banana batter. Top off with the rest of the chocolate batter. Take a butter knife and swirl the batters.
Bake for 40 minutes or until you can pull a toothpick out clean.
